Chinese New Year Dinner:

In Chinese Culture, this dinner is the most lavish of the year. Similar to the American New Year's tradition, the food served is meant to usher in good fortune in the coming year. Decorate with red paper lanterns and red and gold decorations. For luck, give golden coins (chocolate wrapped in gold foil) inside of red envelopes to guests.

Chinese New Year Checklist:

• Spring Rolls
• Dumplings- Shaped like ancient Chinese money, dumplings help bring prosperity into the New Year.
• Lettuce Wraps- Anything with lettuce signifies "growing good fortunes."
• Rice- Making a rice dish keeps you healthy in the New Year.
• Soy and Ginger Glazed Short Ribs
• Whole Fish- Fish should be served with head and tail in tact. This counts towards abundance in the coming year. Also, because fish swim in pairs or groups, it also means togetherness in family or marriage.
• Noodles- Noodles should be as long as you can find them. The long length of the noodles means long life.

Kwanzaa:

This weeklong celebration honors the African-American heritage and customs. Each day a kinara candle is lit to observe one of the seven Kwanzaa principles. The seventh day isconcluded with a feast and gift giving. Food ranges from Soul Food to foods with African flavors.

• Collard Greens- Collards foster economic fortune--the more you eat, the more you'll have. You can substitute cabbage for collards if you prefer.
• Black-eyed Peas- These bring general good luck. Try them in the Southern dish, Hoppin' Johns.
• Pork- Although it can be served a number of different ways, all ways will bring wealth and prosperity.

Passover:

This Jewish Holy Day and Festival commemorates the Exodus where Israelites were freed from slavery in Egypt. This seven day, eight night celebration begins with the traditional Passover Seder, a family meal where the story of Exodus is retold over matzo and wine. Because no leavened bread can be consumed during this time, the food varies from the everyday.
